The LOW CARB BISCUIT!
Today, dear friends, I give you the magical gift of the LCB (Low Carb Biscuit)!
Ahhhhhhhhhh ✨can you hear the angel’s singing?!✨
Or maybe it’s a squishcuit. (See photo) Whatever you want to call it, be sure to at least call it amazing!
You’ll need a few ingredients that you might not have on hand, but they are worth getting and you most definitely should because this will blow your mind, y'all.
🥮LCB Details 🥮
3 Tbsp Almond Flour
½ Tbsp Coconut flour
2 Tbsp Melted Coconut Oil, Melted Butter, or Ghee
1 Egg
½ tsp Baking Powder
¼ tsp Salt (couple dashes)
Butter/Margarine (for spreading on top)
Now, I am from the south and KNOW a thing or two about biscuits. If you are too, do me a favor and take everything you know about these pillows from heaven AND THROW IT IN THE TRASH. This is not your granny’s biscuit, ok?? This is a biscuit to get you through the sad times without carbs. It serves its purpose and it does it well, but it is a substitute, a filler, a participation ribbon type of biscuit. Don’t come at me with it doesn't look, taste, or feel like a real biscuit. I KNOW. lol (Give it to God and just go with it.)
OK Let’s get down to business.
You’re going to need 2 bowls. One to mix and one to bake (in the microwave). Your baking dish needs to be small and round- I use a small glass ramekin. It will take the shape of the bowl you use, so just keep that in mind.
Melt the coconut oil/or butter/ghee in the bowl.
Add the egg and mix together.
Add dry ingredients.
As for the coconut flour, it is optional but gives it just a hint of flavor in such a good way. Don't skip it unless you must. (but if you don't use it, bump up your almond flour by ½ Tbsp.)
Add the batter to your small dish, wait about 30 seconds to let it "set" then put it in the microwave for 80-90 seconds. To check for doneness, the top should bounce back after you touch it.
Now, plop it upside down on a plate (might need to loosen with a knife), put some butter on it (it will need a bit more more moisture, so channel your inner Paula Dean here and SLATHER…if you’re eating low carb, then you need those fats anyway) then ADD THE NEXT PART IS THE BEST PART!!
LOAD IT UP, people!! Sausage, cheese, avocado, cook up that extra egg mentioned above… want something sweater? Add sugar free jelly, fresh berries, even whipped cream!!! I have to admit, having it sweeter is my preference!! LOW CARB STRAWBERRY SHORTCAKE!! EEEEK!
